Jar, 1/2 Cup, 2 oz.

Ingredients

  • 1 large head broccoli (or about 16 frozen florets)
  • 1.5 to 2 pounds skinless, boneless chicken breast
  • 2 cans condensed cream of chicken soup
  • 1 Cup Hellman's/Best Food's mayonnaise
  • 2 Tablespoons lemon juice (fresh squeezed is better)
  • 1 Cup grated cheddar cheese
  • ½ Cup soft bread crumbs (optional)
  • 1 Tablespoon melted butter (optional)

Preparation Instructions:


  1. Cut the broccoli into florets. Drop into boiling water and cook for about 7 minutes till tender-crisp. Drain.

  2. Cut the chicken into bite-sized chunks and bake uncovered at 350 degrees for 15 to 20 minutes until cooked. Remove from pan.

  3. Layer cooked broccoli and chicken on bottom of 9 by 13 pan. Mix soup, mayo, lemon juice, curry; pour mixture over chicken.

  4. Sprinkle cheese evenly, then bread crumbs, then drizzle with melted butter. Bake at 350 degrees for 30 minutes.

This is such a fabulous, rich, cheesy, yummy, chicken-y recipe! I’ve been making this for years and have always felt that it really should be called “Chicken Divine “ – because it is divine! Personally, I think this recipe is perfect the way that it is. I’ve just made it so much in the past and the only thing that I liked to experiment with now & then is the topping. I really like to crush up Frito’s corn chips and mix with the melted butter. It is so good that I’ve decided to make it tonight after typing about it & listening to my stomach growl! LoL! Thanks so much for sharing this recipe!

My mom used to make chicken divan for us in the 60’s (before boneless chicken) This recipe tastes as wonderful as hers did! I made it, using 1/2 c of light mayonnaise and 1/2 c of plain yogurt and it still tasted excellent!

I have been making this version of Divan for many years. The only things I do differently are: 1) use a slightly scant 1 T. Curry powder, 2) Season the chicken lightly with Kosher salt. Then a pinch or 2 each of garlic powder & dried thyme leaves( NOT ground thyme) .I do not cook the chicken till fully cooked but just ALMOST fully cooked. It will finish cooking in the oven . I use panko for the top….2T melted in a bowl or small saute pan and stir in the panko, and toss to coat. Them put that combo on top of the a very light sprinkling of extra cheddar on top of casserole and then top eith the butter panko mix. Then bake closer to 35ish minutes .
NOYE :To me it is important to use Helmans ORIGINAL mayo, not the low fat or olive oil ones. Also if you try to use the Cambells healthy choice cream of chicken soup, the filling will turn out a bit watery b/c that one is watered down to cut the fat.

Am I the only one that thinks it’s funny that the recipe says (fresh squeezed is better) on the lemon juice? Yet it’s author perfectly fine with condensed soup?
Why not have a link to a classic chicken veloutè as well.

Been making this for several years. It is a big hit. It freezes well. Paula Deans recipe calls for crushed potato chips on top. If I freeze it, hold off on the chips till I bake it frozen. Takes about 20 minutes longer but is still delicious!

This has been a favorite for my family. While stationed in Bermuda in the late 70s a kind person shared this recipe. Mine includes water as well. My daughter even asked for recioe while in college. Many generations!!

I have been making this from the back of a Campbell’s Soup can for 30 years. It’s a great quick meal, but never had a layer of cheddar cheese. I think that came along when our American diets demanded more fat. Classic chicken divan does not have cheddar cheese.

I’ve been making this 20 years, I’m heavy in the curry. Instead of bread crumbs I use crushed ritz crackers with butter or crushed onion rings no butter.. Awesome homey goodness.😎
