Chipotle Lime Mayonnaise Recipe
- 2 egg yolks
- 1 cup olive oil
- 3 teaspoons lime juice
- 1 teaspoon chipotle puree
- 3 Tablespoons cilantro
- to taste salt
Bring the egg yolks to room temperature. In a food processor, puree the egg yolks, lime juice, chipotle puree, salt and pepper. Once fully incorporated, slowly drizzle the olive oil in while the food processor is still running. Adjust the seasoning.
Store bought mayonnaise can be used for a quick preparation time, about 1-1/2 cups.
Fresh cilantro is preferred.
Try with the Jamaican Jerk Burgers.
