This is a new personal favorite!

Heat oil in medium pan. Wash and slice mushrooms. Put all ingredients in pan when oil is hot. Saute until desired doneness. Leave the vegetables somewhat crispy--this is good for vitamins!
If you don't like crispy vegetables, put 1/2 cup water in after sauteeing and simmer for 15 minutes.
I've also used 1/2 packet of Ham flavoring to give it a smokier taste.
