Ramen Noodle Salad Recipe
- 1 package ramen noodles
- 1 bunch scallions
- 1 red bell pepper
- 1/2 package cole slaw mix
- 4 tablespoons rice wine vinegar
- 3 tablespoons honey
- 3 tablespoons sesame oil
- 2 tablespoons Japanese 7 Spice
Chop the scallions, julienne the red bell pepper. Break apart the ramen noodles. In a bowl, whisk together the oil, vinegar, honey and Japanese 7 spice. Add the remaining ingredients and mix well. Cover and chill.
This salad really needs to be made a day ahead of time so the noodles soak up all the marinade. Whatever vegetables, meats or nuts you like may be used. Experiment! For a quick fix, you can par-boil the noodles.
