Roasted Tandoori Acorn Squash Recipe

Ingredients

  • 1 large acorn squash
  • 1 tablespoon honey

Serves / Yields

2 large servings

Preparation Instructions

Preheat oven to 350 degrees.

Cut Acorn Squash in half. Slice the bottom so it can stand up in roasting pan. Drizzle the honey over the flesh of both halves. Sprinkle Tandoori seasoning over both halves.

Bake uncovered in a roasting pan for 1:15 to 1:30 hours. Serve warm with butter and soy sauce for dipping.

Helpful Hints

You can also scrape the flesh out after baking to make a filling for ravioli or to stuff artichokes.
