Sesame Sumac Pesto Notes

This Middle-Eastern version of pesto is quick to whip up.

2 cups

Preparation Instructions

Mix all the ingredients in a bowl and blend until well incorporated. Place in a mortar and grind twenty to thirty times. Refrigerate for 4 hours, or overnight, to allow flavors to blend.

Helpful Hints

Serve with tandoori chicken, grilled lamb or a Greek feta salad.

Special Equipment

If you don't have a mortar and pestle, you can use on and off turns in a food processor, but don't overmix.

I have yet to make this pesto yet I am one for creating my own pesto recipes from many ingredients. This recipe is amazing and I am off to the market tomorrow for the ingredients. Can't wait to taste this pesto. I love the much unused ingredient sumac. Will review when I have made this recipe yet I am sure it will be scrumptious.
