Zucchini Bread Notes

We received this recipe from one of our customers at the Milwaukee Spice House.

  • 2 eggs
  • 1 cup white sugar
  • 1 cup oil
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 3 cups flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 2 teaspoons cinnamon
  • 1/2 cup raisins (optional)
  • 1 cup nuts (optional)

1 loaf

Preparation Instructions

Mix together eggs,sugar, oil,and vanilla. Add remainder of the ingredients mix until blended, do not over mix. Bake at 325 for one hour or until toothpick comes out clean.

Helpful Hints

Adding a rip banana improves, will not harm it.

You can substitute apple pie spice or pumpkin pie spice for the cinnamon.

I often use yellow squash, butternut squash or even cucumbers as a substitute for the zucchini (with our without nuts, I also include dried cranberries or raisins). Try it! I think you'll like the variations and get more fruits and vegetables into the little ones.
