Gary Wiviott's Barbecue Rub

Gary Wiviott just won a Good Eating award from the Chicago Tribune's Food Section. They called him the "professor of Barbecue". Others call him Chicago's own Barbecue Life Coach. Chances are, if you are a local Chicagoan, who loves local barbecue, you have rubbed elbows with Gary, or his barbecued ribs. Folks are always happy when he shows up at any backyard barbecue, because we know where Gary goes, great barbecue follows - usually cooked by Gary! You may have heard of him at some of the true "cue" shacks around town. He is also known for his low-and-slow Five Easy Dinners barbecue program. Like any great cook, Gary is not about to reveal his cue secrets but he entrusted them to the staff of The Spice House. We can not reveal the exact ingredients under penalty of death, but here is what we can tell you about the blend: it has a good shake of parika, garlic, onion, oregano, thyme, a few types of chile pepper and a pinch of salt.
