This cinnamon has a high 3 - 4% natural oil and is appreciated for its rich, sweet yet slightly spicy flavor.
The reason we stock four types of cinnamon is to suit your personal preference. In our shop, we like to give our customers tastes of each so they can decide. My husband tends to glare at me when I recommend this Chinese cinnamon as my personal favorite, since the Saigon cassia is far and away the most popular amount our customers. Recently I showed him a blind taste test in one of the best cooking magazines. What topped the list? You guessed it, the CHINA cinnamon. (While he still does not agree with me, at least the glaring has ceased)! It is a wonderful all-around baking cinnamon; great for spice cakes, any type of pie (from peach or apple to sweet potato), sticky buns, linzertortes, pumpkin bread, cheesecake, apple strudel, baklava. Sprinkle on top of French toast, oatmeal or hot cocoa.
We offer this cinnamon in a finely ground powder for baking, or in pieces of whole bark for teas, marinades, or home grinding. Whole bark chips range in size from 1/2" to 2".
What I say is that, if a fellow really likes potatoes, he must be a pretty decent sort of fellow.
