This cinnamon has a high 3 - 4% natural oil and is appreciated for its rich, sweet yet slightly spicy flavor.

The reason we stock four types of cinnamon is to suit your personal preference. In our shop, we like to give our customers tastes of each so they can decide. While our Saigon cassia cinnamon is by far the most popular, the China cassia cinnamon is often preferred by bakers for its milder sweet flavor, which blends better in dishes where cinnamon is not meant to be the dominant flavor. It is a wonderful all-around baking cinnamon; great for spice cakes, any type of pie (from peach or apple to sweet potato), sticky buns, linzertortes, pumpkin bread, cheesecake, apple strudel, baklava. Sprinkle on top of French toast, oatmeal or hot cocoa.

We offer this cinnamon in a finely ground powder for baking, or in pieces of whole bark for teas, marinades, or home grinding. Whole bark chips range in size from 1/2" to 2".
