Creamy Peppercorn blend is a versatile seasoning that can be mixed with several variations of ingredients to make a very low-fat salad dressing or an extra rich and creamy dressing and vegetable dip.
For a delicious dressing, mix 1 tablespoon seasoning and 1 tablespoon warm water; let stand a few minutes to release the pungency of the spices. Mix this into 2/3 cup sour cream and 1/3 cup mayonnaise; thin a little by adding 1 tablespoon red or white wine vinegar. For an extra-rich dressing, use only sour cream and thin with a little whipping cream. For a low-calorie version, substitute plain yogurt for the sour cream and use low-fat mayonnaise. After making your first batch, you'll find it easy to match the results to your own personal taste. Try this JUST ONCE--you won't believe the difference in flavor the five minutes of mixing makes compared to even expensive "gourmet" pre-mixed dressings. If you leave the dressing on the thick side, it makes a nice sandwich spread. We also discovered, through desperation--we were out of our favorite coarse pepper blend when we started to make dinner--that this is a wonderful seasoning sprinkled over steaks, chicken or hamburgers. If you want to make your own peppery croutons, this is the seasoning to use. Hand mixed from: Tellicherry black pepper, Kosher flake salt, garlic pieces, cane sugar, French thyme, and minced parsley.
I don't think a really good pie can be made without a dozen or so children peeking over your shoulder as you stoop to look in on it every little while.
