Fajita Seasoning makes a wonderful south-of-the-border marinade with full flavor, but not a lot of heat. This blend is a very good all-purpose seasoning salt for poultry, steaks, burgers, vegetables.
Hand mixed from: coarse flake salt, Tellicherry black pepper, Mexican oregano, garlic, nutmeg, turmeric, celery, paprika, red pepper, coriander, ginger, cumin, white pepper, cinnamon, fenugreek, fennel, nutmeg, arrowroot, cardamom, cloves, oregano, basil, marjoram, rosemary, and thyme.
Mix 1 tablespoon fajita seasoning with 2/3 cup vegetable oil and 1/3 cup vinegar or lime juice. Add to thin strips of flank or round steak, chicken or pork and marinate in the refrigerator overnight. Throw the whole mixture in a preheated cast-iron skillet and cook quickly until done. Add bell pepper strips of various colors and onion rings or wedges to enhance flavor and presentation. Serve in flour tortillas with guacamole and sour cream on the side for a quick and fun meal the whole family is sure to enjoy.
