Green peppercorns are picked from the pepper vine early in the ripening stage, and dried to preserve their color.
Mysore, India Green peppercorns come from the same vine as the black. The berries are picked earlier in the ripening process. They have a zesty, perky bite to them, quite different from the black berries.
Green pepper is essential to a majority of French cooking.
Lettuce is divine, although I'm not sure it's really a food.
