Hyde Park Seasoning
We have many good customers in the wonderful ethnically diverse neighborhood of Chicago known as Hyde Park. They have been requesting a blend named for their neighborhood for many years. We admit, the fact that the president also resides there may have been a catalyst in finally getting this seasoning created!
Hyde Park is home to much of Chicago's cultural history: the World's Fair way back in 1893, the University of Chicago, the Museum of Science and Industry, the DuSable Museum of African-American history and the Frank Lloyd Wright Robie House, just to name just a few. Hyde Park prides itself that it thrives on diversity. As a melting pot of nationalities within a city known as THE melting pot, this pretty much gave us free range as to which spices we chose to reflect the neighborhood. Just for fun, we decided to see if we could reflect some of our new president's ethnic heritage.
So we chose our best bold black Tellicherry pepper, mixed with a spice that, at one point in history, competed head to head with black pepper - the African grains of paradise. No other blend that we make contains these fragrant seeds which are peppery with a hint of citrus, butter and coriander. Another ingredient not featured in any of our other blends is the exotic Hawaiian black sea salt, this salt has a very nice sweet after finish. Shallots lend elegance and sophistication. Bird chilies provide a little heat, in a nod to the Monk parakeets, whose bright colors can be seen flitting in and out of trees in Harold Washington Park. These birds are a most interesting anomaly. Indigenous to Brazil and Argentina, some pet birds escaped, or were let loose, back in the seventies. Much like our hard working immigrant ancestors, that they have learned to survive the frozen Chicago winters is a testimonial to survival instincts!
This blend is particularly suited for slow-roasting meats, where the long cooking time gives the subtle Grains of Paradise flavor time to develop. It's also a nice blend for roasted potatoes, cauliflower, artichokes and whitefish. It is now our very favorite seasoning for baked chicken. Really good also on slow roasted pork.
