Meyer Lemon Peel Zest

This is a milder, sweeter lemon, so the zest is also milder and less sour.
Meyer lemons are believed to have been a hybrid of regular lemons and sweet or mandarin oranges. They are smaller and rounder than conventional lemons, with a soft sweet skin. They contain thymol, the essential oil found in thyme, so the zest of a Meyer lemon goes well in savory dishes and marinades as well as sweet dishes. It has a less pungently citrusy taste than our regular lemon zest.
