Lime Peel is a tangy ingredient for marinades.
This is the dehydrated version of the zest of the lime, which you will see called for in a variety of marinade recipes. Often used in the currently popular Pacific Rim style of cooking, which combines the West coast, tropical islands, and Asian concepts of flavorings. Lime peel adds a nice tartness to vinaigrettes, salsas, rice and many fish recipes. To reconstitute, soak in water for about 15 minutes.
