New Mexican chile pepper pods have a marvelous sweet, pungent, earthy flavor which you might find quite addicting. These chiles are also known as California or Anaheim peppers.
It is possible to derive three distinct flavors from one New Mexican chile pod: the seeds alone, the flesh alone, or the whole pod. Each produces different levels of flavor and heat.
You can bring the whole dried pod back to life by soaking it in hot water (almost at the boiling point) for 15-25 minutes. Then, the pods can be pureed into paste for sauce, salsa, tamales, flautas, burritos, tostadas, or a great variety of marinades.
