Oregano is one of the most commonly used herbs in the U.S., featuring prominently in Italian, Greek, and Mexican cooking. Pizza alone accounted for a 5000% increase in oregano use when it became popular here after WWII
Mexican oregano has a stronger, more bitter flavor than the Greek, which holds up better to the stronger flavors of Southwestern cooking. Powdered oregano blends evenly for use in sauces and rubs.
