Pasilla chiles have a long, purple pod similar to ancho chile peppers.
Pasillas are one of the most popular chiles. Pasilla teams with ancho and mulato chiles (a version of ancho) to form the "holy trinity" used in making moles. They're great for sauces of all sorts. They clock in at 3-5 heat level, on a scale of 10.
People who know nothing about cheeses reel away from Camembert, Roquefort, and Stilton because the plebeian proboscis is not equipped to differentiate between the sordid and the sublime.
