Sunny Oaxaca Ancho-Coffee Rub
This wake-me-up blend makes a delicious seared crust for what is known as a Cowboy Steak, which also can later turn into Cowboy Steak Chili. Great salt-free flavor on grilled pork chops, tenderloin or baby back ribs. Add to brisket or pulled pork. Makes a wicked Southwestern style burger. Even works on salmon. The Southern Mexican state of Oaxaca is known for its diverse and excellent cuisine, based on the vast array of products grown and farmed in its mountainous terrain. This earthy, salt-free meat rub is based on two of the more common flavors: sweet, raisiny ancho chilies and rich dark coffee. Balanced by bitter Mexican oregano and a little sweet brown sugar and cinnamon, this rub is declicious on traditional Oaxacan specialties like barbecue goat.
