Cream of Broccoli Soup Notes

This was from Rick's Cafe in Sioux Falls, S.D. The place has been closed for many years and sadly he is not with us today.

I made a few changes for our family. I usually double or triple the recipe. If you do not like broccoli you can replace with your favorite vegetable.

Ingredients

  • 1 cup chicken stock
  • 1 box frozen broccoli (or fresh when in season)
  • 1 tablespoon granulated onion
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup whole milk
  • 3 ounces cream cheese at room temperature

2 cups

Preparation Instructions

In a medium or large sauce pan cook broccoli in chicken broth with granulated onion. While broccoli is cooking melt butter in a frying pan. Add flour until you make a paste. Add milk and cream cheese. Heat until creamy. Pour milk mixture in the broccoli when the broccoli is done. Stir. The whole process should take about 30 minutes.
