Preheat oven to 275 degreess. Bring eggs to room temperature. Beat the egg whites, vanilla, lemon peel and cream of tartar until soft peaks form. With mixer on high, add the sugar one tablespoon at a time, until stiff peaks form. Line a baking sheet with parchment paper and, using a spoon, drop the egg white mixture in 3 inch mounds, use the back of the spoon to make a "nest." Bake in the oven for 50 minutes. Turn off the oven, leave the nests inside and do not open for an hour. Spread lemon curd to line the "nests," and fill with chopped seasonal fresh fruit.
Maramalade or a tart jam may be substituted for lemon curd.
