Italian Chili Notes

I made this recipe up. My youngest son was on the swim team in high school and they have pasta parties before each meet. He wanted something different. I put on my thinking cap and came up with this one. We all love it now. It's a family favorite and easy to prepare.

Ingredients

  • 1 pound penne pasta
  • 1 can black olives, cut into quarters or left whole
  • 2 cans your choice of chili, with or without beans
  • 1 can red beans, or kidney beans
  • 1 8 ounce can tomato sauce
  • 1 large onion, chopped
  • 1 pound ground turkey or beef
  • 1 cup mozzarella cheese, grated
  • 1 cup cheddar cheese, grated
  • 1 cup jack cheese, grated
  • 1 tablespoon poppy seeds

9 to 12 Servings

Preparation Instructions

Preheat oven to 375 degrees.

Boil desired pasta for 8 to 10 minutes (under cooked is best). Drain and set aside.

Cook turkey or beef with chopped onion. Drain juices off and add to mixing bowl when cooked.

While meat and pasta are cooking cut the olives and add to large mixing bowl along with the beans, chili and tomato sauce.

Add 1/2 of each cheese type to mixing bowl. Mix thoroughly.

Mix in cooked pasta and poppy seeds.

Pour all mixing bowl ingredients into a 9x12 baking dish and cover with remaining cheese. Bake for 25 to 30 minutes. Serve hot.

Helpful Hints

You may add more cheese for a smoother texture.

Chopped green bell peppers and chopped celery are also good additions.

If you want some heat to the dish, you can add Frank's Red Hot Sauce.
