Mustard Powder - Information and Spice Variations

Mustard powder, or mustard flour, is made by grinding the de-shelled mustard seeds. It comes in varying heat levels based on the types of seeds ground. The Spice House carries three heat levels: mild, medium, and hot. Medium heat is comparable to Coleman's mustard powder, and considered standard in Western cooking. Hot mustard powder is also known as Oriental style mustard, and more commonly used in Asian cooking.

Mustard powders are useful additions to many dressings and sauces, including most BBQ sauces. Mustard powder can be made into prepared mustard using nearly any liquid and additional flavors.

Before the 1970's real men not only didn't eat quiche, they didn't eat much of anything that hadn't been hacked from a bovine quadruped and served in its simplest form, along with fried, baked, or mashed potatoes.
