Cacao nibs are a delicious new product in our line that we are really excited about. Unlike chocolate chips, which of course have sugar, these are simply the cleaned, roasted, winnowed and lightly crushed cacao beans. Their taste is nicely bittersweet, and they have the crunchy, toasty flavor one derives from nuts. Add to all sorts of baked goods and desserts: brownies, cookies, truffles, cakes, tarts, ice cream, whipped pie toppings. Even more fun to play with in savory sauces, moles, chilli, and salads.

First, cacao beans are brought in from a variety of locations in the world, always searching out the highest quality beans, properly fermented. The beans then go through a cleaner, then a roaster where heated air gently toasts them at just the right temperature. The winnower machine crushes the beans a bit and removes their thin shells. The results are known as cacao nibs. These, eventually turn into cocoa powder and chocolate of the finest quality.

While other companies might be leary of selling you a product that you might turn into a high quality finished chocolate product that could prove competition to theirs, they have a really great philosophy.
