A relative of both ginger and cardamom, this is what gives Grains of Paradise its peppery, floral flavor. This spice was used in Europe much the same way black pepper is used and it was also added to beverages like beer and wine. Grains of Paradise became popular when pepper became expensive and when the cost of pepper subsided Grains of Paradise became less known. Luckily it has been brought back through cooking knowledge of its peppery flavor.

Never even heard of this stuff before, but REALLY fun spice. It's kinda citrus-y, little bit pepper-e, but I've found it to be a go-to spice for quite a few dishes now from lentils, to me goreng, to salsas (both tomatillo and regular). Combines great with cumin seed and coriander for a quick spin in the grinder, or just crushed under a pan for a quick sprinkle :)
