  • 2/3 cup extra virgin olive oil
  • 1/3 cup red wine vinegar
  • 1 can garbanzo beans, rinsed and drained
  • 1 cup cherry tomatoes
  • 1/2 cup salami
  • 1/2 cup cubed mozzarella cheese or mozzarella pearls
  • 10 oz romaine lettuce, chopped
  • 5-10 oz radicchio, chopped
  • Fresh basil, for garnish

Preparation Instructions:

Add 2 tbsp Classic Italian Dressing Mix to a mason jar with 2/3 cup olive oil and 1/3 cup red wine vinegar; shake well. Let dressing meld for up to one day in the refrigerator. When ready to assemble the salad, shake dressing again.

Slice cherry tomatoes in half. Slice or chop the salami so it is uniform in size with the cherry tomatoes and mozzarella cubes.

In a large bowl, toss lettuce and radicchio with desired amount of dressing.

Add garbanzo beans, cherry tomatoes, salami, and mozzarella cheese to the bowl & toss again.
