This simple salad is dressed with our go-to Lakeshore Shallot & Herb Vinaigrette. We love to add soft boiled eggs, avocado, red onion, and more!

Ingredients

  • For the Vinaigrette:
  • 1/4 cup extra virgin olive oil
  • 2 tbsp white wine vinegar (or lemon juice)
  • 1 tsp Dijon mustard
  • 1 tsp honey
  • For the Salad:
  • 3 cups arugula
  • 2 soft boiled eggs, halved
  • 1/2 avocado, sliced
  • 1/4 red onion, thinly sliced
  • 1/4 cup slivered almonds
  • 1/4 cup feta cheese, crumbled
  • Lakeshore Vinaigrette, to taste

Preparation Instructions:

For the vinaigrette:

In a small bowl or jar, whisk together the vinegar, Dijon mustard, honey, and Lakeshore Shallot & Herb.

Slowly drizzle in the olive oil while whisking continuously until emulsified.

Taste and adjust seasoning if needed.

Let the dressing sit for 5–10 minutes to allow the shallots and herbs to hydrate and blend with the flavors.

Shake or whisk again before using.

For the salad:

To a bowl, add arugula, red onion, avocado, and slivered almonds. 

Pour in the desired amount of prepared vinaigrette. Gently toss to dress the salad.

Top with halved soft boiled eggs, crumbled feta cheese, and an additional sprinkle of Lakeshore Shallot & Herb.
