Ingredients

  • 1 can (15 oz) white beans (cannellini or great northern), drained and rinsed
  • 1 cup cucumber, diced
  • 1 cup cherry tomatoes, halved
  • 1 cup green beans, trimmed and cut into 1-inch pieces
  • 1/4 small red onion, thinly sliced

Preparation Instructions:

Make the Chimichurri sauce. Add 1/3 cup warm water to the jar of Green Chimichurri and stir to rehydrate. Add 1/2 cup olive oil and 1/3 cup red wine vinegar, stir well.

Bring a pot of salted water to a boil. Add green beans and cook for 2–3 minutes until bright green and just tender. Transfer immediately to an ice bath, then drain well.

In a large bowl, combine white beans, cucumber, tomatoes, green beans, and red onion.


Pour the chimichurri dressing over the salad and toss to coat evenly. Let sit for 10–15 minutes so the flavors meld.

Taste and adjust seasoning if needed. Serve at room temperature or chilled.
