We love this soup for a quick and delicious weeknight dinner. Smoky, spicy, and sophisticated flavors transform any rotisserie chicken into southwestern comfort food.

Ingredients

1 medium red onion, chopped
1 red bell pepper, chopped
2 Tablespoons olive oil
1 Spicy Chicken Tortilla Soup ExactPack
4 cups chicken broth
28oz can crushed tomatoes
1 rotisserie chicken, shredded
1 cup frozen corn
Crushed tortilla chips for garnish

Preparation Instructions:

To a large pot, add oil, onion, peppers and spice packet and saute over medium-high heat for 4-5 minutes until the vegetables soften.

Add broth, tomatoes, and 2 cups of water. Bring to a boil and then reduce heat to simmer for 20 minutes.

Add corn and shredded chicken to heat through. Add salt to taste.

Serve each bowl topped with diced avocado, shredded cheese, fresh cilantro, lime wedges, and extra chips.

My kids love this soup, and it is amazingly easy to make. Like, two kids in travel sports and I still have time to make this for dinner. Comes together in under 30 minutes. I add broth as we like it a bit more liquidy to add chips to, and I also add in a can of black beans for some extra holding power. But both my boys eat bowl after bowl of this, and will ask for it on a regular basis.

I followed the recipe minus the 2 cups water. but added some orecchiette pasta at the end for a little more substance. Though pretty spicy ,the flavor was excellent .i think it would be less flavorful with the amount of liquid in the recipe as the amount of spices in the packet is not much
