Ingredients

  • For The Potatoes:
  • 2 lbs baby potatoes (red, yellow, or mixed), halved
  • 2 tbsp extra virgin olive oil
  • For The Salad:
  • 1/2 cup light mayo
  • Sprinkle of Tuscan Harvest
  • 1/4 cup chopped fresh dill
  • 1/4 cup chopped fresh basil
  • 2 tbsp chopped fresh parsley
  • 2 chopped green onions
  • Light sprinkle of lemon juice and lemon zest

Preparation Instructions:

Preheat the oven to 425°F.

Toss the potatoes with olive oil and Tuscan Harvest seasoning. Spread them cut-side down on a parchment-lined baking sheet.

Roast for 35–40 minutes, turning once halfway through, until the potatoes are deeply golden and crispy on the edges.

Transfer the hot roasted potatoes to a large bowl and gently toss with mayo. Sprinkle with a bit more Tuscan Harvest.

Fold in the dill, basil, parsley, and green onions until evenly coated. Finish with the lemon juice and zest.

Let the salad rest for 10–15 minutes before serving to allow the flavors to meld. Serve warm or at room temperature.
