This recipe came from one of our customers in the Milwaukee store.

Submitted by: Kate Erd from Milwaukee Spice House, WI
Yield: About 750 ml (1 bottle)

  • Make a sugar syrup with water, white and brown sugar and corn syrup, heat briefly and cool.
  • Stir in almond and vanilla extracts plus vodka and brandy, rest 30 minutes, then bottle in sealed glass.
  • Age at least one month before drinking and keep bottles cool or refrigerated. Light corn syrup works.

Preparation Instructions:

Mix the water, white and brown sugar and corn syrup in a pan and bring to a boil for only a few minutes. Let cool for about 30 minutes. Add the vanilla and almond extracts, as well as the vodka and brandy and mix thoroughly for a few minutes. Allow the mixture to diffuse it ingredients for about 30 minutes before bottling. Frequently Asked Questions

What ingredients do I need?

You need water, white sugar, brown sugar, corn syrup (light corn syrup is fine), almond extract, vanilla extract, vodka and brandy. The original recipe does not list exact quantities, so follow proportions from a trusted liqueur recipe if you want precise measurements.

What are the basic steps and timing?

Heat the water with white and brown sugar and corn syrup until it boils for a few minutes, then cool about 30 minutes. Stir in the vanilla and almond extracts and the spirits, mix a few minutes, let the mix rest about 30 minutes, then bottle.

How long should I age the amaretto before drinking?

Age the bottled amaretto at least one month for flavors to meld. Longer aging often improves the taste. Store bottles in a cool, dark place or refrigerate if you prefer.

Can I use light corn syrup or other substitutes?

Yes. The recipe notes light corn syrup is fine. You can also adjust sweeteners to taste, for example using only white sugar or a simple syrup, but that will change texture and mouthfeel.

How should I store it and how long will it last?

Use tightly sealed glass bottles that have been cleaned and preferably sterilized. Refrigeration is recommended. Properly stored, homemade amaretto can keep for several months to about a year, depending on sugar and alcohol levels.

Can I change the sweetness or flavor intensity?

Yes. Reduce or increase sugar or corn syrup to change sweetness. Add more almond or vanilla extract in small amounts to boost flavor. Taste as you go and let it rest between adjustments.

Are there safety or allergy concerns?

This is an alcoholic beverage made with store-bought spirits. Do not attempt to distill alcohol at home. Almond extract may trigger nut allergies for some people, so avoid serving to those with tree nut allergies. Always label homemade bottles with contents and date.
