Frequently Asked Questions
How do I make this creamy garlic dressing?
Combine 2 tablespoons nonfat dry buttermilk powder with 1/2 cup water, then stir in 1 cup nonfat plain yogurt, seasonings, minced garlic and chives. Put the lid on a jar and shake well. Chill at least 2 hours before serving so the flavors blend.
Can I use fresh garlic instead of dehydrated garlic?
Yes. One small clove of raw minced garlic equals about 1 1/2 teaspoons dehydrated garlic. Fresh garlic gives a brighter, stronger bite. If you want a milder flavor, use less or substitute roasted garlic.
What can I use instead of nonfat dry buttermilk powder?
You can substitute 1/2 cup liquid buttermilk in place of the powder plus water. If you do not have buttermilk, mix 1/2 cup milk with 1/2 teaspoon lemon juice or vinegar and let it sit 5 minutes to thicken, then use that.
Is Nutrasweet required and what are alternatives?
Nutrasweet is only a small sweetener to balance flavors. You can use a little sugar, honey, maple syrup, or a powdered low calorie sweetener. Add a little at a time and taste until it suits you.
How long will the dressing keep and how should I store it?
Store the dressing in a sealed container in the refrigerator. It will keep for up to two weeks. Toss it if it develops an off smell, visible mold, or an unusual texture.
Can I freeze this dressing?
Freezing is not recommended. Yogurt-based dressings tend to separate and become grainy after freezing and thawing. It is best made fresh or stored refrigerated for short term use.
How can I change the thickness or flavor?
For a thicker dip use Greek yogurt or less water. To thin it, add a little milk or water. Increase tang with a splash of lemon juice or a teaspoon of vinegar. Add herbs like dill, parsley or extra chives for different flavors.
Is it safe to use raw garlic in this refrigerated dressing?
Yes, when the dressing is kept cold and used within the recommended two weeks it is generally safe. If you are worried about raw garlic, use dehydrated garlic or roast the garlic first. Never leave garlic mixed with oil at room temperature.
