Ginger Pomegranate Cocktail
This delicious Ginger Pomegranate Cocktail features a homemade ginger simple syrup & our Crystallized Ginger Nibs. Paired with bourbon, pomegranate juice, and ginger beer- it's flavorful & refreshing.

Preparation Instructions:
Make the ginger syrup:
Place all of the ingredients in a small saucepan. Bring to a boil, stirring constantly until the sugar is dissolved. Reduce the heat to low and simmer for 5 minutes. Remove from the heat, cover and let sit for 10 minutes. Strain the syrup into a jar, cool completely and refrigerate until ready to use.
Make the cocktail:
In a jar or strainer combine the pomegranate juice, bourbon, lime juice and ginger syrup. Shake well.
Fill 2 glasses with ice and divide the cocktail between them. Top with ginger beer and garnish with crystallized ginger nibs, pomegranate arils and lime slices. Serve immediately.

For a non-alcoholic mocktail variation, remove the bourbon and adjust ginger beer to taste.
