  • For The Bowl
  • 1 cup cooked rice
  • 1/4 cup pickled red onions
  • 1/4 cup chopped tomatoes
  • 1/4 cup Roasted zucchini
  • 1/4 cup green chimichurri sauce
  • 1-2 grilled chicken thighs
  • For The Chimichurri Sauce
  • 1/3 cup warm water
  • 1/2 cup olive oil
  • 1/3 cup red wine vinegar
  • For The Grilled Chicken
  • 1.5 - 2 lbs boneless, skinless chicken thighs
  • 1-2 tbsp olive oil
  • 1 tsp salt
  • 1 tsp freshly ground black pepper

Preparation Instructions:

Heat grill to medium-high (about 400–425°F). Lightly oil the grates.

While the grill heats, pat the chicken thighs dry with paper towels (this helps them brown better).

Drizzle with olive oil and rub to coat evenly. Sprinkle salt and pepper on both sides.

Place chicken on the grill and cook for 5–7 minutes per side, until nicely charred and cooked through. Cook until the internal temperature reaches 165°F. 

Remove chicken from grill and let rest for 5 minutes. 

Prepare your rice bowl. Fill bowl with rice and top with tomatoes and red onions. Slice chicken and add to bowl. Drizzle generously with chimichurri.
