Preparation Instructions:

Cook 1 lb of bacon on a sheet pan lined with parchment paper at 400 degrees F for 20-25 minutes. Drain grease well and chop into small pieces.

Chop the baby potatoes into small pieces. Toss them in a bowl with a little bit of Olive oil and salt. Cook them in an air fryer at 400 degrees F for about 15 minutes. Once they are cooked how you like them season them with Lakeshore Shallot & Herb Seasoning.

Whisk together 8 eggs with a splash of milk and season with Lakeshore Shallot & Herb Seasoning. Cook them in a pan with 1 tbsp of butter over medium heat. Carefully use a spatula to stir them gently until they are cooked to your liking.

Build the breakfast bowls with a scoop of crispy potatoes, the eggs, bacon, queso, and a spoonful of fresh Pico de Gallo. Enjoy!
