Oven Roasted Potatoes
This recipe has become an overnight classic! I was preparing a recipe, and noticed that the spice ingredients were in the new blend I had bought--Back of the Yards Garlic Pepper. I usually make more than the recipe calls for, because they don't last long!

Quibble, quibble… for that, one star? I used russets too small for baking. Quartered them, misted them with olive oil, sprinkled with the Back of the Yards and 30 minutes in the “air fryer” at 350 F. I now have an idiot proof informal side or appy with almost zero active prep.
We make these with russet potatoes cut into small pieces. We use 3 tablespoons of olive oil to 2 tablespoons of the Back of The Yards spice rub. Mix olive oil and spices to make a paste and then pour onto 3 pounds of cut-up potatoes, mixing until evenly coated. Cook in the oven at 425 for about 30 mins, or until the potatoes are soft, and then finish in an air fryer for perfect browning. They are a big hit with my family and there are never any leftovers.
The recipe calls for russets or “other waxy potatoes.” Russets ARE NOT waxy potatoes! Red skin potatoes are one example of waxy potatoes.
Russets cook up dry and fluffy – good for baking and frying – they are NOT waxy potatoes (as implied in your ingredient list.) Waxy potatoes would not work well in this recipe in my opinion. Russets or Yukon Gold would be best.
