Ingredients

  • For The Lemon Herb Butter:
  • 5 tbsp salted butter, softened
  • Juice of 1/2 a lemon
  • 2 cloves of garlic, minced
  • 1 tbsp fresh parsley, finely diced
  • For The Salmon:
  • 1 lb salmon, divided into 3 pieces
  • 1/2 lb baby gold potatoes
  • 1/2 bunch of asparagus
  • Salt and pepper, to taste
  • For The Yogurt Sauce:
  • 1/2 cup plain Greek yogurt
  • Juice of 1/2 a lemon
  • 1 tbsp olive oil
  • Salt and pepper, to taste

Preparation Instructions:

Bring a large pot of water to a boil. Add potatoes and boil for 15 minutes. Drain and set aside to cool enough to slice into quarters.

Meanwhile, mix together softened butter with Tuscan Harvest, lemon juice, garlic, and parsley.

Preheat your grill to about 400°F. 

Make foil packets with asparagus, potatoes, and salmon. Season everything well with salt and pepper. Spread your butter mix on salmon filets, then put a dab of butter mix on asparagus and potatoes. Fold foil packets closed.

Cook on the grill for 16-17 minutes, rotating once halfway through. Check for doneness of potatoes, then remove from the grill.

Meanwhile, mix yogurt sauce ingredients together. Serve with salmon packs and enjoy!
