Put all the ingredients, except the chives in a blender or food processor, blend till smooth.
Put dressing in a bowl or a jar and stir in chives. Taste the dressing and add more salt and pepper if desired.
Serve immediately or refrigerate. Will keep for up to a week in the fridge.
You can add most fresh herbs to the dressing to mix it up. If you don’t have an avocado you can sub a 1/2 cup sour cream to create the consistency. I also like to add some extra roasted granulated garlic (about a teaspoon.)
