Harissa Lamb Chops & Greek Whipped Feta

Preparation Instructions:
Season both sides of the lamb chops with a generous pinch of salt.
In a large bowl, combine the olive oil and harissa seasoning and mix to combine.
Add the lamb chops and toss to coat thoroughly. Cover and refrigerate overnight or for at least 3 hours.
When ready to pan-fry, heat a large heavy skillet over medium heat. Add 2 tablespoons of olive oil. Once hot, add the lamb chops, being careful not to overcrowd the pan.
Sear for 3-4 minutes per side depending on the size, then remove and let rest for 3-5 minutes.
To make the whipped feta: in a food processor, add the Greek yogurt, feta cheese, lemon juice, garlic clove, olive oil, and seasonings.
Blend on high for 30 seconds, scrape down the sides, then continue blending for 1 minute or until smooth.
To plate, spread a generous amount of the whipped feta on the dish, top with the optional cilantro and mint leaves, and finish with the lamb chops.
