Herb-Crusted Roasted Potatoes
I was looking for a way to dress up oven-roasted potatoes so my non-potato loving husband would eat them. My mother used to make a similar dish and I can no longer find the seasoning blend (besides, it was so full of chemicals and preservatives) The taste was pure nostalgia! I tried the Sunny Paris Salt-Free blend and fell in love! It was the flavor I was looking for! I tried it on my basic oven-roasted potato recipe and voila! The recipe is super simple and so good.

Ingredients

Preparation Instructions:

Wash and cut potatoes into bite-size chunks.
Toss with olive oil to coat, then arrange in a single layer in a baking dish.
Sprinkle generously with Sunny Paris (1 Tbs for a light flavor, 2 for more intense).
Lightly salt and pepper to taste.
Bake at 450-degrees for 30 to 40 minutes (or until potatoes are tender) stirring once, then broil for 5 to 10 minutes to brown and crisp the potatoes.

More About This Recipe

Arranging the potatoes cut-sides up on aluminum foil will give a crispier result and help deal with any sticking.

This is a great recipe. I sprikled a little malt vinager when I removed them from the oven. They have a Mable Garlic blend that I used on butternut squash and sweet potato, roasted with ghee and cinnamon.
