Juicy Stuffed Turkey Breast with Orange & Cherries

Preparation Instructions:
Preheat the oven to 375 degrees. Line a baking tray with aluminum foil and place a wire rack on top. Or you can use a roasting pan with a roasting rack.
Place the turkey breast skin side up on a cutting board and with a meat tenderizer flatten the turkey breast to approx ½” thick. Flip over and set aside.
For the stuffing, place a skillet over medium/low heat and add the butter, diced celery, and onion. Saute for 5-8 minutes until the onions are translucent.
In a mixing bowl add the poultry seasoning, egg, stock, salt, pepper, cherries and mix well.
Add the bread cubes and the cooked onion and celery. Mix well.
Place the turkey skin side down, add the stuffing on top and press down a little. Roll the turkey tightly seam side down. Tie twine every 1-2” along the entire turkey breast.
Place on the roasting rack.
In a microwave safe bowl melt the butter and add the House Blend Turkey seasoning. Mix well and baste the turkey.
Place in the oven and cook for 60-80 minutes. The internal temp should reach 165. Remove, allow to rest for 10 minutes. Slice and enjoy!
