Yield: Serves 4
Heat a wok over high heat until very hot. Mix extra virgin olive oil and sesame oil in a bowl. Add about 1 tablespoon oil to the wok and 1 cup of rice. Spread rice out on the bottom of wok and up the sides. Allow rice to cook and crisp up a bit before stirring and cooking until crispy all the way through. Transfer to a bowl.
Add more oil to the wok and another cup of rice. Continue cooking all the rice in the same manner.
Add another tablespoon of oil and cook mushrooms, scallions, and ginger and cook until mushrooms are browned. Add Vulcan’s Fire Salt, eggs, and soy sauce. Allow eggs to loosely set before stirring. Transfer to rice mixture.
Stir fry any additional ingredients before adding back rice and briefly stir-frying all ingredients together before adding any additional Vulcan’s Fire Salt. Serve hot.
