Oaxacan Ancho Chile Grilled Chicken
Yield: 4-6 servings
Preparation Instructions:
Combine spices, honey, lime juice, olive oil, and salt in a bowl and whisk together. Place the sliced chicken cutlets in the bowl and combine until chicken is coated with marinade. Marinate for at least 15 minutes. Grill chicken on high heat for 3-4 minutes per side or until internal temperature reaches 165F.
Serve with warm tortillas, Spanish rice, or on top of fresh salads.
