Seared Tuscan Salmon with Cheesy Spinach Orzo

Golden Tuscan salmon over creamy, cheesy spinach orzo- ready in 30 minutes! This one-pan dinner is one of our favorites for the weeknight. Our Tuscan Harvest blend gives the salmon a beautifully savory, zesty crust and adds layers of flavor to the orzo.

Ingredients

  • For The Salmon:
  • 2 tbsp olive oil
  • 3 salmon portions
  • For The Orzo:
  • 2 tbsp olive oil
  • 6 garlic cloves, finely chopped
  • 1 cup orzo
  • 2 1/2 cups chicken broth
  • 1/2 cup heavy cream
  • 1/2 stick butter
  • 1/2 cup shredded mozzarella
  • 1/4 cup grated parmesan or pecorino
  • 2 cups chopped spinach
  • Chopped parsley, to taste
  • Salt and pepper, to taste
  • Juice of 1/2 a lemon

Preparation Instructions:

Coat the salmon with olive oil and season each portion with Tuscan Harvest.

Heat a large pan over medium-high heat with a drizzle of olive oil. Add the salmon and cook for 3–4 minutes per side. Remove it from the pan and set aside.

Add 2 tablespoons olive oil to the same pan. Add the garlic and sauté until fragrant.

Stir in the orzo and chicken broth and bring to a simmer. Cover and cook for 8–10 minutes, or until the orzo is al dente and has absorbed most of the liquid.

Stir in the cream, butter, red pepper flakes, and parsley, followed by the mozzarella and parmesan or pecorino. Season with salt and pepper to taste.

Gently fold in the spinach and cook until wilted.

Nestle the salmon back into the orzo, squeeze the lemon over everything, and cook for another few minutes before serving.
