Celebrate peak produce season with a dish that encapsulates the feeling of an endless summer. By tossing fresh, sun-ripened tomatoes in our Tuscan Harvest blend and pairing them with luxurious burrata, you get a restaurant-quality appetizer that is effortlessly simple to make.

  • Marinating ripe tomatoes in olive oil, red wine vinegar, and Tuscan Harvest seasoning intensifies their natural sweetness and creates a flavorful dressing.
  • Finish the salad with burrata or fresh mozzarella, basil, and toasted bread for an effortless appetizer, side dish, or light summer meal.
  • The tomatoes can marinate for anywhere from 30 minutes to 12 hours, making this an easy make-ahead recipe for entertaining.

Ingredients

  • For The Dressing:
  • 2/3 cup oil
  • 1/3 cup vinegar
  • For The Salad:
  • 2 lbs mixed heirloom and cherry tomatoes, sliced and halved
  • 3 (4 oz) balls burrata
  • 1/4 small red onion, very thinly sliced
  • 1/4 cup fresh basil leaves
  • 1 tbsp balsamic glaze

Preparation Instructions:

Start by making the Tuscan Harvest dressing. In a small bowl or jar, whisk together the olive oil, vinegar, & Tuscan Harvest seasoning until well combined. Let it stand for 15 minutes. This recipe makes approximately 1 cup of dressing. Add to taste in the salad.

To a large bowl, add cherry tomatoes, heirloom tomatoes and red onion. Pour over the Tuscan Harvest dressing and gently toss till coated.

On a large serving platter, arrange the burrata. Then spoon the tomato mixture throughout. 

Finish with a drizzle of balsamic glaze, an extra sprinkle of Tuscan Harvest, and fresh basil.

Let the salad rest for 10 minutes before serving so the tomatoes release their juices and the flavors meld together.
