Bergamot is a small citrus fruit that grows in Southern Italy, in the province of Reggio di Calabria. It also grows in France, Africa and Turkey. A cross between Seville oranges and pear lemons, it is sometimes also refered to as "the Prince's Pear." The fresh and subtle flavor of bergamot extract–derived from the fruit's peel–is a favorite among bakers and bartenders alike. Added to tea cakes, ice-creams and cocktails, bergamot lends these treats citrusy and floral notes. Specifically, it is an essential ingredient in Turkish Delight, orange marmalade and the French confection, Bergamote de Nancy. And, when added to black tea, it transforms a traditional "cuppa" into Earl Gray.
