White peppercorns are from the same plant as black peppercorns but have been soaked until their sharp black outer shell comes off. This gives them a mellow and slightly fermented taste that goes well with strong flavors and meaty dishes. We add the fruitier and sharper Tellicherry peppercorns to add a bright note, making this combination of pepper flavors in our European Peppercorn blend wonderful for cooking of all styles.
