Persian-Style Grilled Carrots

Why should lamb have all the fun? Shawarma seasoning is terrific on vegetables like carrots or eggplant.

Ingredients

  • 1 lb carrots, peeled and sliced in half longwise
  • 1-2 teaspoons olive oil, enough to coat carrots
  • 1/3 cup feta cheese, crumbled
  • 1 lemon, sliced in half
  • 1-2 sprigs fresh mint leaves, torn or shredded

Preparation Instructions:

Whisk spices, salt, and oil together and let it sit for at least five minutes.

Toss carrots in spiced oil until evenly coated.

Grill over medium-high heat coals, turning them every so often, until sufficiently tender to your liking.

Grill lemon over low heat while carrots cook, sear at end for presentation of grill marks.

Plate with toppings of cheese and mint. Squeeze lemon juice over carrots to your liking.

Helpful Hints

Optional additions or substitutions: Pomegranate seeds, goat cheese, yogurt, honey, or toasted almonds, pine nuts, or pistachios.

Did not have Shawarma, but used sweet curry powder, turmeric, white pepper and some smoked paprika – amazing! Did mint and goat cheese – the charred lemons give it a nice twist. Highly recommended and very easy.
