If the corner fruit vendor had a grill, this pineapple would be their best selling item. Grilled pineapple already has a deliciously caramelized flavor. This recipe goes an extra step with the tequila caramel.

Ingredients

1/2 cup butter
1 cup brown sugar
2 oz tequila
1 teaspoon Ceylon cinnamon
1/4 cup heavy cream
1 ripe pineapple
2-3 teaspoons Mexican Chile Lime Seasoning

Preparation Instructions:

In a small pot, whisk together tequila, cinnamon, and sugar. Add butter and cream to the pot. Heat and stir ingredients together using a whisk until incorporated. Raise heat to medium and allow mixture to come to a simmer, whisking/stirring every so often. Continue cooking until caramel has thickened to desired consistency. (Roughly 5-8 minutes) Set aside and keep warm for serving.

The caramel sauce will froth and bubble up as it heats. You may want to bring it off the heat and whisk it for a minute and then return it to the heat. Repeat this several times until desired consistency is reached.

Skin pineapple and slice fruit into long wedges, removing fibrous core. Save a few of the prettiest leaves as a garnish

Grill pineapple over high heat, until grill marks form. Roughly 2 minutes per side.

Season pineapple with Chili Lime Seasoning before plating and drizzling with caramel sauce.
