Fruity, sweet, and soft, Brazilian pink peppercorns are a delight. Not true peppercorns, these berries are related to cashews (tree nuts) and are harvested from the evergreen Peruvian pepper tree. Given their delicate nature, pink peppercorns are never ground. Use them whole on fresh fish and in salads. Pink peppercorn sauces with a fruit component are delicious on vanilla ice cream.

About This Product

Pink peppercorns, or rose baises, are fun to use in cooking, as they add both a fruity, peppery flavor and bold, beautiful color. These berries are grown primarily in the Brazilian state of Espirto Santo, located along the southeast coast just north of Rio de Janeiro. From a small mastic-tree, these little berries are not a proper member of the pepper family. The green berries grow in tiny clusters of white flowers that form in autumn, and become bright red before harvesting. Their name comes from their similarity to true peppercorns in shape and how they mimic the flavor of black peppercorns when cooked. Sweet and mild, they make a colorful addition to many dishes: salads, eggs, seafood, and white sauces. Most notably, pink peppercorns are used in fish, poultry and game dishes, most often to flavor the delicate sauces for these recipes. Since they are too soft to be ground in a peppermill by themselves, they are sprinkled whole or lightly crushed in most dishes.Used as a garnish, they make a stunning color presentation.

Please Note: Not true peppercorns, pink peppercorns are berries related to cashews (tree nuts).

Review Summary

Customers love the light fruitiness and fragrant pop these add, especially when used whole or lightly crushed for texture. They’re a favorite on fish, scrambled eggs, mashed potatoes, yogurt with fruit, and roasted butternut squash, and some even swap them in for black pepper in biryani or pulao for a brighter, more interesting flavor.

Punchy

It’s totally a personal thing but per other people’s reviews I topped my salad with these pretty little pink peppercorns. If you love biting into a punchy peppercorn these are for you. I personally don’t. Maybe in the peppermil.

Perfect Pink Peppercorns!

These are absolutely delicious! I put them on my yogurt and fruit snack, on scrambled eggs, and on a roasted butternut squash casserole! (So far) I’m sure I’ll find other uses, too!
